You can have pretty much any drink you want iced. For every espresso drink (such as latte, mocha, etc.), there is an iced counterpart (iced latte, iced mocha, etc.). There is also iced coffee and iced caffe con leche (iced coffee w/ milk). Any of the iced drinks mentioned in this paragraph uses whole ice pieces.

If you want something more like a milkshake, you can get something blended with ice. This is called a frappucino. First decide what flavor you're looking for (chocolate, caramel, straight coffee, banana, etc.). Then decide if you want a coffee flavor in there. That will make a difference in what frappucino base is used - a coffee base, a lite coffee base, a decaf coffee base, a creme (non coffee) base, or a tea base. To make life easy for you, if you simply tell the starbucks barista what flavor frappucino you're looking for, and whether you want coffee in it or not, they should be able to figure it out for you.

The possibilities are literally endless. If you're looking for a real pampering, ask for a caramel mocha banana coconut frappucino.
