Too much air in the batter can cause the cake to fall.
Mix the ingredients wrong and it you get brick instead of a cake.
Bake it too long and it is dry--not long enough and it is too moist (raw)

Mixing up the wrong ingredients. Baking for too short/long. Stacking layers can be difficult to handle sometimes (cake could fall apart).

This is soooo open ended...
everything coudl go wrong .... bad eggs, bad baking powder, boogers, too much flour, not enough chocolate ...
