Absolutely. Grate it, store it in airtight bags (I use recycled milk bags sealed with clips from the dollar store) or you can blanch chunks or slices of it and do the same and use it in soups or stews. When you thaw it, though, there will be a lot of liquid - make sure to compensate for this in your recipes

It is possible, but don't use frozen packages. It can preserve, but it does not taste the same and it looses the texture.
My late grandma has used other type of preservaion: she grated the zucchini, added salt and water, a little bit of perservative (natrium benzoate) put it in the jar, close it, and leave it on dark place for the season.

We do it all the time. Just clean the zucchini, grate it, pack it, and freeze it. No worries. It's a little wet when you thaw it, but just go ahead and use it in zucchini bread. If you measure it before freezing, you will have the exact amount you need when it thaws. Just dump it in the batter and you'll be all set.

zucchini contains allot of water and if you freeze it it will obtain more water.
So when you go to use it just remember you may want to try to get the extra water out of it before cooking with it.
But there is no reason why you can't freeze it.

It gets kind of mushy but used in bread it is O.K.
My wife says to measure it into the size you need before you freeze if. She says when it defrosts the volume is less and it can be deceiving..

we do that every year so we can can zucchini cake! never had a problem w/ ice crystals as long as it was vaccu-sealed.
