Champagne Cake Recipe courtesy Sandra Lee
Cooking spray
1 box (1-pound 2 1/4-ounce) moist white cake mix
1 1/4 cups extra dry Champagne
1/3 cup vegetable oil
3 large egg whites
1 can whipped white frosting
1/4 teaspoon Champagne flavoring
Silver mini disco balls, optional
Silver Dragees, optional, if available in your area
Silver edible glitter, optional
Preheat the oven to 350 degrees F. Lightly coat the bottom of a 9 by-13-inch cake pan with cooking spray.
In a large mixing bowl combine the cake mix, Champagne, vegetable oil, and egg whites. Beat on low speed with an electric mixer until just combined. Scrape down the sides of the bowl with a rubber spatula and continue beating on medium speed for 2 minutes. Pour into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Remove it from the oven and cool completely.
Empty the frosting into a small bowl and add the Champagne flavoring. Stir to combine and set aside.
To make the mini-cakes, with a 3-inch ring mold (or use an 8-ounce pineapple can with top and bottom removed) stamp out 6 cakes. Slice the cakes in half, horizontally, to make layers. Frost the bottom layer, replace the top layer and frost the tops and sides of cake. Decorate with the disco balls, Dragees, and glitter, if using.
Cook's notes: Champagne flavoring and edible glitter are available where cake and candy making supplies are sold. Dragees, or silver candy balls, are not available in all states.

* 1/4 teaspoon baking soda
* 1 cup sour cream
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan or a 10 inch Bundt pan.
2. In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, mixing well after each. Then stir in the vanilla. Combine the flour, baking soda and baking powder, add to the creamed mixture and mix until all of the flour is absorbed. Finally, stir in the sour cream. Mix for 1 or 2 minutes just to be sure there are no lumps. Pour the batter into the prepared pan.
3. Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of cake comes out clean. For Bundt cakes, allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack.
Buttercream icing for wedding cakes."

* 8 cups confectioners' sugar

1. Cream the butter and shortening together until smooth. Gradually add the sugar, milk, and vanilla extract. Mix until smooth.

Very easy peasy cake recipe:
2 eggs (weight these, still in shell, and weigh the below ingredients to the same weight)
Self Raising flour
Caster Sugar
Butter / margerine
Chuck everything in to a bowl and mix it all together (you can use flavourings if you want e.g. coffe, vanilla etc.). Put the mixture into a buttered cake tin or cup cake cases and bake on gas mark 5 for about 18 minutes (to check if cooked skewer the middle and if it comes out clean the cake is done).
This recipe was taught to me when i was about 8 by my nan and it works every time.

"This cake was first made for me by a friend while I was visiting her after she had delivered her 11th child. I told her, 'I should have baked for you!'"
INGREDIENTS:
3/4 cup butter
2 1/8 cups white sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons lemon juice
1 1/2 cups mashed bananas
1/2 cup butter, softened
1 (8 ounce) package cream
cheese, softened
3 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
DIRECTIONS:
1. Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 9x13 inch pan. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt. Set aside.
2. In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan.
3. Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and place directly into freezer for 45 minutes. This will make the cake very moist.
4. For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake.

lemon cake
4oz self raising flour
4oz caster sugar
4oz butter or margerine not cheap stuff!
2 med eggs
1 lemon
mix sugar and butter together until smooth
add grated rind and juice of the lemon
add both eggs but mix them first before adding
add sieved flour abit at a time
put in greased cake tin
bake at 180 degrees for 20 to 25 mins dont open oven or cake will sink

When I was younger, my Aunt made me Ribbon cake for my birthday. It was really something and ohhhhhh so tasty!
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/4 cups sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 cup plus 2 Tbsp. milk
1/2 tsp. lemon extract
1 1/12oz. unsweetened chocolate melted and slightly cooled
1 Tbsp. milk
Thoroughly cream shortening and sugar. Add eggs and beat until fluffy. Sift all dry ingredients. Add alternately with 1 cup plus 2Tbsp. milk to creamed mix. Pour half the batter into another bowl. Add Lemon Extract to one half. Mix together chocolate and 1 Tbsp. milk; blend into other half of batter. Pour into greased and floured 9" pan. Bake at 375 for 25 min. or until done.

White and Pink Layers
5 egg whites
2/3 cups shortening
1 tsp. vanilla
3 tsp. baking powder
1/8 tsp. peppermint extract
1/2 cup sugar
2 1/4 cups sifted cake flour
Cream shortening and sugar. Add egg whites and blend them into the shortening and sugar. Sift the dry ingredients and add to the wet mixture. Divide into 2 bowls. In one bowl add the vanilla and in the other add the peppermint (you could also add a drop or two of red food coloring). Stir. Pour both batters into seperate round, 9 inch pans and bake for 25 min. or until done.
Boiled Frosting
***DO NOT MAKE THIS ON HUMID,HOT DAYS
***If the day is really warm put your mixing bowl and beaters in the freezer for a few hours first.
1 cup granulated sugar
1/8 tsp. cream of tarter
1/3 cup water
1 egg white, beaten, until stiff with a pinch of baking powder
Combine the first 3 ingredients. Stir over medium heat until sugar is dissolved, bring to a boiling point. Add 3 Tbsp. of syrup to beaten egg white. Beat after each Tbsp. is added. Boil remaining syrup until it spins a thread. Pouring gradually, add the egg white and boiling mixture until thick.
If you wish to add a little color to this frosting, you can.
Before stacking each layer be sure to frost the top of each layer, this frosting will help make sure it doesn't slide around too much. It also helps to use those cake skewers. Frost entire cake and enjoy! YUMMY!!

Get a good book to refer to from your local store or library, and take time to get to know your oven and practice.
Your local college will probably offer cake decoration classes.
