Seems like the main cause of itch is movement of hair or dust particles or histamine, a chemical released by cells in the skin. Histamine is also the chemical that causes the itch and reddening when bitten by insects – which is why a mosquito bite itches such a lot. Any of these stimuli irritate nerve-endings, which then send signals to the brain for further action. The action is scratching.

My nose doesn't itch when my hands get dirty.
Maybe yours does because you are breathing in the dirt on your hands, which lands on your nose hairs, which makes you nose itch.

you're nose itches cos if you're hands are dirty then theres probably a lot of dirt in the air as well so you're nose is trying to make its self sneeze to get rid of it.
