Does one include fruit in the traditional recipe?

Hello,

This is a great one from someone i know in Scotland very tasty,

INGREDIENTS:
1 3/4 cups all-purpose flour
4 teaspoons baking powder
1/4 cup white sugar
1/8 teaspoon salt
5 tablespoons unsalted butter
1/2 cup dried currants or raisins
1/2 cup milk
1/4 cup sour cream
1 egg
1 tablespoon milk

DIRECTIONS:
Preheat the oven to 400 degrees F (200 degrees C).
Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. Overworking the dough results in terrible scones!
With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.
Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.


Tip:

Scones can be reheated if not eaten promptly by wrapping in aluminum foil and heating in oven until heated through or split in half and toasted.

I am sure you all have great recipes maybe handed down or passed on by someone however heres my top tip for you all- DO NOT over work your mix ! mix gently until mixed and stop, make by and not in a machine - the more you over work the mix the more your dough will become tight, make sure your hands are cold ( hot hands in any pastry melts the butter or fat content thus altering the properties of the mix )
try making some homemade lemon curd to go with your scones

This recipe has worked for me for 30+ years.

Scones
From the Joy of Cooking
Yields approximately 1 dozen.
Ari Rapkin

1 3/4 cup sifted all-purpose flour
2 1/4 tsp baking powder
1 Tbsp sugar
1/2 tsp salt
1/4 cup cold butter
2 eggs
1/3 c cream (or 1/3 c milk & some powdered milk)

Sift flour, baking powder, sugar, and salt together into a large bowl. Cut in butter until small pea sized. Beat eggs in a separate bowl. Reserve 2 Tbsp of egg. Beat cream into the remaining egg. Make a well in the dry ingredients. Pour in the liquid and combine with a few rapid strokes. Handle the dough as little as possible. Place it on a lightly floured board. Flour hands, and pat dough to 3/4 inch thick. Cut into diamonds, squares, or whatever shapes you want. Brush with reserved egg and sprinkle with salt or sugar. Bake 15 minutes at 450.
Optional additions (add to dry mixture after cutting in the butter)

1/4 cup raisins, currants, etc.
1/2 tsp orange or lemon zest
1/2 tsp cinnamon

Okay Stephen...

I must admit, I cheat. Crate and Barrel sells wonderful scone mixes !!! You can experiment with all kinds of fruit! Here's a link about the history of scones and some great recipes (if you would like to be braver than me and try them from scratch!!).

yeah dude, i love scones!! i wanan know how to make them really good too! sorry for not givin you an answer, but i tried making my own and they were horible, the best scones i have tried are the ones at Albertsons grocery store.
