Hi!
I come from NZ, and have taken quite a few of my friends from other countries around NZ and here is what I would reccomend...
Head to the South Island.
Proberly the cheapest way to travel around NZ is to go on the "kiwi expereince". www.kiwiexperience.com
On this you can bus around, getting on and off, they arrange all the hostels etc for you to stay in, and really is a great way to get around and see NZ. Also you meet loads of neat people who are also backpacking and have loads of laughs.
Public transport is not very good in NZ, with not many rail & bus systems. So this would be a good way to get over this problem.
I am not too sure of your age group, but if that does not interest you (the "kiwiexperience"), then I would reccomend hiring a campervan and travelling that way around.
Have a look at www.maui-rentals.com to give you an idea of what I mean.
The area of Golden Bay, Nelson and Able Tasman (the very top of the South Island) are extreamly beautiful and not terribly "touristy". Worth a visit.
Also the people, scenery and landscape along the west coast of the south island is amazing! Drive along that way, stop off at a local pub and be in store for one of the best most honest and entertaining evenings you will ever have!
You will find, scattered in every town (small & big) through out NZ are "Information Centres" signposted. They are very helpful and you can go in there to see what is fun to do in the township you're in. They will also book accom and tours etc for you.
Kiakora on the East Coast of NZ, is another must go place. I went on the Whale Watching tour with one of my English friends of which he REALLY enjoyed. You see whale, hundreds of dolphins etc and is a great day out.
Trust New Zealanders...you will more than likely meet some 'locals' who will invite you into their homes for dinner, or even to stay. This is a hard concept to grasp, that they are sincere in their welcome and have no hidden intentions.
Take them up on their offer and you will have an awesome time.
Also it is safe to hitch-hike around NZ and is a great way to meet people.
Grab a Lonely Planet, which I consider to be a bible to traveling in any country.

Visit Queenstown, South Island. When there, be sure to take the gondola ride to the peak. If you can afford it, have dinner there & enjoy the lovely & magnificient view of the mountains. This is worth a visit. Also the Fiords in South Island. Overall, New Zealand is a very beautiful & clean country all round, very peaceful in the countryside, scenic & great for people who enjoy nature. Shops & supermarkets close early & there's not much of night life. Enjoy yourself. Its a country geared to tourists.
