A little discussed but widely known fact about potlucks is that they tend to inspire fierce competition among dedicated cooks. After all, who can hang around a potluck table without wondering whose dish disappeared the quickest? Which was the tastiest? The most labor intensive? We intend for every one of our visitor's dishes to fly off of the table and win a spot in the non-official Independence Day Potluck Hall of Fame!

If you and your co-workers do a lot of pot luck lunches, I am going to suggest not a recipe but a cookbook that is devoted to recipes best served for a crowd.
If you want to buy one just put "POTLUCK COOKBOOK" into a search on eBay--you can get them for a few bucks up to $10.
If you don't want to buy one, go to the library and check out any cookbook annual and start going through recipes.
One of the best potluck cookbooks out there is one from 1993 titled: POTLUCK for 33,000. It was published as a fund raiser for a department store and the recipes were made and voted on by the employees. (It's hard to find and can be expensive.)

First of all ask around to see what everyone else is bringing make sure u dont bring the same dish as someone else..then remember it has to be made in a large quantity depending on how many people r going to attend. Then search over ur favorite recipes..any kind of past dish will work great, and any kind of potatoe dish also will work..but not to many people bring a main course to pot lucks..so that would also work great.something like meatballs,chicken wings,chicken and dumpling, also u can think of a buffet at the local resturant and make something u really like off of it......good luck and enjoy

the quickest easiest dish would probably be baked ziti. Everyone (including the vegetarians) usually likes it. Boil up some ziti noodles, put in a baking dish with a jar of spaghetti sauce and top with mozarella cheese. bake at 375 for about 30 minutes and you're done. Is good leftover too!

Apricot Chicken.
Chicken Breast
1 packet of French onion soup powder
1 medium can of Apricot nectar (not the large size)
Bake in over for 45 mins to 1 hour at moderate heat. Can be served with rice.

I have seen everything you can imagine at a pot luck. If everything else fails and you can't or dont have time. Go to your grocery store and get some potatoe salad put it in one of your dishes and some paprika i think it is and there you go.
you can also do a raw veggie tray or fruit try.

When I bring this to work, people flip out because it is so good, and its got to be the easiest recipe ever.
1 box tri colored rotini
1 bag of carrot, broc, cauliflower, cut up
1 bottle italian dressing (use as much as you need)
Cook noodles, add stuff, chill. People think your a top chef if you bring this. I would double it for a work thing.

INGREDIENTS:
1 (11 ounce) can mandarin oranges
1 (8 ounce) can crushed pineapple, drained
3 bananas, sliced
2 cups flaked coconut
2 cups miniature marshmallows
1 cup pecan pieces
1 (16 ounce) container frozen whipped topping, thawed
1 cup maraschino cherries
Also can add strawberries, Fruit cocktail and melon balls
