I'm guessing you mean interpolation related to digital cameras. As you probably know a digital camera takes a photo with a resolution of a certain number of pixels (little dots). Now say that you a dot of red nest to a dot of white a camera with interpolation will guess what a pixel in between these would be which logically would be pink and insert it in. A camera without interpolation will just leave it as it is. It is a method of trying to make a camera look better than it is.

In Maths it is a method of estimating a point on a curve in between two known points.

It means you know what the weather was on Monday and you know what it was on Friday, so you just guessed what the weather was on Tuesday, Wednesday and Thursday.

Usually you guess that Monday's weather morphed smoothly into Friday's weather through the week. That's linear interpolation. It's good enough most of the time but it can miss the odd three-day hurricane.

I am a SAP trainer & in relation to SAP system, interpolation means an estimated figure between 2 known figures.

It occurs anytime you resize or remap (distort) your image from one pixel grid to another. In graphics, when you resize a pic or whatever, it's kinda like the software makes an educated guess on what a pixel's color will be based on it's neighbor's color. Because pixels must be added or taken away to grow or shrink a pic.
