It is a poetic convention. It is a personification of the pronoun for country. in the way a mother provides the nourishment for her baby, a country provides the nourishment for its peoples. Really, a country is an abstract thing that includes the land, the government, and the people and their culture. Things in English usually use the pronoun 'it' but 'she' invokes more feeling than it.

We don't. Many countries are or were referred to in a masculine sense, such as France, Italy, Spain, Germany, and many Latin America countries.
It has become less popular since the term Fatherland was heavily associated with Nazi Germany.
