For the real stuff, check out some of the enormous department stores in Nanjing road. For knockoffs and cute pieces you can't go past Xiangyang markets. Easy to find if you google it. Even the little stalls in the subway have some cute stuff.

It depends what you're looking for, but there are some decent places for pearls and jade in the Yuyuan gardens area.
