mozzerella, but why stick to tradition, mix in a little asiago or parmesean or ramano, some pizzas you can use sharp cheddar or even gorgonzola.

mozarella is the best.. but try putting processed cheese and melt it when baking to high temps... tastes 1000 times better....

in our restaurant we only use mozzerela. We use two different kinds and blend them together. cheap and expensive one.
