Celiac disease is the cause of your anemia. Are you eating 100% gluten-free? Have you had your antibody levels tested to see if you are really gluten-free in your diet?
You may need intravenous vitamin/mineral therapy if you are not absorbing nutrients. Your doctor should be able to help you with this, or find a good Naturopathic Physician.
I too have celiac disease.

anemia is when your body doesn't hold onto the iron it needs and becomes low.......the only way the anemia gets worst is by not taking the iron as you should or your not taking enough of it.years ago i was told that i had anemia..my iron was so low the doc couldn't measure it !!! i was taking 3 iron pills daily which for someone else would be too much,,then i was told to cut it down to 2 and now its at one and only because I've built it up enough to cut back some. but I'll always have to take it because i don't hold it in as i should, chronic anemia is when your body has gone for so long without iron that you're on the verge of organ damage...that' what my doc said i needed to avoid and so far i have.....ask the doc....

kidney beans, pinto beans, liver, black strap molasses, rice bran, raw beet greens ( not the beets),mustard greens, lentils, dried peaches, and prune juice.
moderately high in iron:
cooked dried apricots, cooked beet greens, dates, lean meats(lamb, turkey,and veal), lima beans, chili, cooked spinach, and dry and fresh peas.
recommended to include in diet:
Eating fish at the same time as vegetables containing iron increases absorption. Omitting all sugar from diet increases iron absorption as well.
Apples, asparagus, bananas, broccoli, kelp, leafy greens, okra, peas, plums, prunes, purple grapes, squash, turnip greens, yams, alfalfa, apricots, beets, beet greens, blackstrap mollasses, bran, cereal grains (especially oats), comfrey, eggs, horsetail, nettle, parsley, raisins, seaweeds, spinach, sunflower seeds, tofu, watercress, whole grains, yellow dock and foods high in Vitamin C
avoid these foods:
beer, candy bars, dairy products, ice cream, and soft drinks.
