Apple Pudding

A recipe that was handed down through the years from Mother to Daughter. It's just a simple and easy 'Apple Pudding' recipe. When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either warm or cold, but warm is better. It is good plain but better with milk, cream, whipped cream or lemon sauce.

Original recipe yield: 1 - 9x9 inch dish.

INGREDIENTS:
6 tart apples - peeled, cored and thinly sliced
1/4 cup all-purpose flour
1 cup sugar
1 pinch salt
2 cups milk
1 tsp cinnamon ( optional )

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
Toss apples with flour, sugar, cinnamon and salt and place in a 9x9 inch baking dish. Pour enough milk into dish to come almost to the top of the apples, but not cover them.
Bake in preheated oven 45 minutes, until apples are tender. Serve warm. So delicious :)

Nellie & Joe's Key Lime Pie
•1-9" graham cracker pie shell
•1-14 oz. can sweetened condensed milk
•3 egg yolks (whites not used)
•1/2 cup Nellie & Joe's Key West Lime Juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie shell and bake at 350 degrees for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream and garnish with lime slices.

Healthy Dessert? I wish. One of the better ones we have tried is really easy. Angel food cake with strawberries and cream is a really easy, fast, and relatively healthy option. Slice strawberries, and sprinle a bit of Splenda over the slices. Then, take a small slice of angel food cake (they are generally fat free), and add a few spoonfuls of slices strawberries. Top with fat free Cool Whip. It isn't decadent like a triple layer chocolate cake, but it's really light, and a great summer option.

Dessert is never exactly healthy; make it more healthy by using as little sugar as possible. Try fresh strawerries dipped in hardening chocolate sauce.

Refreshing Dessert
1 bakery angel food cake (or homemade, doesn't matter)
1 can diced/chunk pineapple, drained, reserve juice
1 can mandarin oranges, drained, reserve juice
1 container coolwhip

Chop half the mandarin oranges into small pieces. In bowl, combine half of coolwhip with half the pineapple and the chopped oranges. Slice the food cake. Top a slice of cake with a layer of pineapple and a layer of coolwhip mixture. Top with another slice of cake, a layer of regular coolwhip and top with mandarin orange slices.

Take the reserved pineapple and mandarin orange juice and place in blender with 1 cup ice and 2 cups ginger ale, sprite or club soda. Blend well and pour into glasses and serve.

This is refreshing as it is light....
1 cup skim milk
2 Sm. pkgs of instant vanilla or banana pudding
1/8 tsp. coconut or banana flavoring
1/2 cup plain, low fat yogurt
1 8oz. can crushed pineapple, NOT DRAINED
11oz. can Mandarin oranges, drained
16 oz. sliced peaches, drained and cut
Combine in a bowl: milk, dry pudding, yogurt and flavoring.
Add fruit and toss gently.
Cover and refrigerate for a few hours.
Variations: can substitute lemon pudding and omit coconut and banana flavoring....
You could also serve this layered with angel food cubes in a sundae dish.

One premade angel food cake, a lot of fresh strawberries, and some fat free cool whip. Slice the strawberries and sprinkle with splenda. Let sit overnight. Next day, slice the cake and pile on the goodies. MMMM! Practically fat free!

hey.........i just read on yahoo a couple weeks ago that chocolate is good for you heart, and can help lower blood pressure, especially the dark.
