I am running out of ideas for foods to cook. I need some fast easy and inexpensive Ideas that don't include takeout. We are on a budget.

Cheesy Chicken & Dressing Casserole
Very quick and wonderfully hearty, tasty chicken and dressing meal that you can make from start to finish in about 40 minutes.
INGREDIENTS:
1 chicken (approx. 3 lbs.)
1 can cream of mushroom soup
1 can cream of celery soup
2 cups chicken broth
1/2 cup butter or margerine, melted
1 package herb-seasoned stuffing mix (8 oz.)
1 cup shredded cheese
PREPARATION:
Boil chicken; cool, remove meat and cut into bite size pieces
Combine soups and broth; add chicken to the mixture
Add melted butter/margerine to stuffing mix
Combine chicken mixture with dressing mixture in a 2 to 2 1/2 quart casserole dish
Bake at 350 degrees for 30 minutes
Top with shredded cheese and return to oven for 5 minutes

Dianne's Chicken Enchiladas - Quick & Easy
Quick and Easy rolled tortillas make these Chicken Enchiladas a snap to make! Serve with salad, mexican rice and refried beans for a full Mexican fiesta!
INGREDIENTS:
2 Tablespoons butter or margerine
1/4 cup all-purpose flour
2-1/2 cups chicken broth
1 teaspoon dried coriander
1 can (4 oz.) chopped green chilies, divided
2 cups cubed cooked chicken
1 cup (4 oz.) shredded Monterey Jack cheese
8 flour tortillas (7 to 8 inches)
1 cup (4 oz.) shredded cheddar cheese
PREPARATION:
For Sauce: Melt butter in saucepan, stir in flour until smooth
Gradually add broth and bring to a boil, cook and stir for 2 minutes until thickened
Stir in coriander and half of the chilies
In a bowl, combine the chicken, Monterey Jack cheese and remaining chilies
Spoon 1/3 cup chicken mixture onto each tortilla and roll up
Place seam side down in a n ungreased 13 in.
x 9 in. x 2 in. baking dish
Pour sauce over enchiladas, sprinkle with cheddar cheese
Bake, uncovered at 375 degrees for 15-18 minutes or until heated through and cheese is melted
Makes 4 servings. Serve with salad, mexican rice and refried beans for a full Mexican fiesta!


Easy Turkey Ranch Pie
Easy Recipe for Easy Turkey Ranch Pie. Here's a great way to get your kids to eat turkey and get some variety in your evening meals. It's super easy and fast to make. Add this one to your family favorites!
INGREDIENTS:
1 1/2 cups cut-up cooked turkey
1 1/2 cups frozen mixed vegetables
1/2 cup shredded Monterey Jack cheese
1/2 cup Biscuit baking mix
1 envelope ranch dressing mix
1 cup milk
2 eggs
PREPARATION:
Heat oven to 400°.
Grease 9-inch pie plate.
Stir turkey and mixed vegetables together in a medium bowl, spoon into pie plate.
Sprinkle shredded cheese over mixture.
Stir Biscuit baking mix and dry ranch dressing mix together
Stir milk and eggs together and then stir together with dry ingredients mixture until blended.
Pour into pie plate over meat, vegetables and cheese mixture.
Bake 35 minutes or until knife inserted in center comes out clean.
Allow pie to cool 5 minutes before serving.

Makes 6 servings.

Dianne's Coca-Cola Crockpot Pork Ribs
For these ribs (or roast) I put all the ingredients together at once in the crockpot or slow cooker and let it cook on high until the ribs are melt-in-your-mouth tender (about 6 hours). Then you can turn the crockpot/slow cooker to low to continue cooking/simmering until ready to serve. You can use any caramel colored cola product to make this slow cooker recipe. The caramel flavoring adds a sweet tang to the meat that kids love.
INGREDIENTS:
2 -4 lbs boneless pork ribs (or beef, you can also use pork or beef roast)
2 cans Caramel Colored Cola ( I use Diet Coke, since that's what I drink)
1 cup tomato catsup
1/2 cup Worchestershire sauce
1/2 cup karo syrup
1/2 cup any prepared BBQ sauce (we like Jack Daniels BBQ Sauce)
1/8 cup yellow mustard
1 tablespoon salt
1 tablespoon black pepper
4 teaspoons sugar
Chopped onion, peppers, garlic or other spices to your taste (optional)
PREPARATION:
Place all ingredients in list in slow cooker and cook for 6-8 hours, until meat is tender. Add water to liquid as needed to cover meat. If you like to flavor your ribs or roast with onions, garlic, or other spices, add those to the cooked meat mixture about an hour before serving time. .

Sheryl's Smothered Chicken

Grill some boneless chicken breasts, top 'em with whatever toppings you like. I use a mixture of sauteed diced green peppers, diced onions, and diced tomatoes (Be sure to saute your veggie toppings until tender before you top your chicken) Then add some cheese on top (I use american and provolone), and cook till cheese is melted (you can either do this in a skillet or put your chicken breasts in a casserole dish and pop 'em in a 350 degree oven for 10 mins. until cheese melts. Other topping variations included portabello mushrooms, asparagus, sundried tomatoes, roasted red peppers, spinach, whatever you have, it's not an exact science. You can also use any kind of cheese. The secret is to use two cheeses and mix em. Makes for an ooey gooey chicken breast with some nice veggies tucked under the cheese. Add some side dishes and you're good to go.

Chicken and Stuffing Bake

4 Chicken Breasts, rinsed, patted dry, and sprinkled with lemon pepper seasoning
1 package Stove Top Chicken Stuffing Mix (round container that makes 4 cups)
Chicken Broth (2 cups, since 1 can is a little less than 2 cups use the can plus water to equal 2 cups)
2 Jars Franco American Classic Slow Roasted Chicken Gravy

Preheat oven to 400°. Prepare stuffing mix according to directions substituting chicken broth in place of water. Arrange stuffing down the center of a glass baking dish. Spoon small amount of gravy on bottom of baking dish on either side of stuffing. Arrange chicken breasts over gravy, overlapping if necessary. Pour remaining gravy over chicken breasts. Cover with foil and bake for 15 minutes. Uncover and bake another 30 minutes.

Serve with baked potatoes and a salad with honey french dressing.

Shawna, at the moment I have squash, pumpkin, sweet potato and onion in the oven roasting, to make a roasted pumpkin and sweet potato soup. Followed by stuffed cannelloni, and Rapini.

2. grilled blackened chicken with Betty Crocker scalloped potato's green bean casserole, Texas toast and ice tea to drink..
3. grilled pork tenderloin with bake potato (be sure to have butter, dour cream, chives, and bacon bits), broccoli with cheese sauce, and sliced tomato's, sliced cucumbers, and sliced red onions in Italian dressing. sister shubert rolls and ice tea to drink.
for dessert have Marie Callendar's key lime pie or chocolate silk pie.
