Well. It's preferable to have fresh but if it still smells like vanilla then use it. It's being cooked anyway and the amount you use won't matter. Its just flavoring.

Should be ok if it smells ok. Make your own. Take one litre of vodka add 2 vanilla beans to the bottle and store for about 4 months. It will not be as dark as store bought but it will be just as flavorful and a hell of a lot cheaper.

yeah well technically artificial esssences are ok to use after their expiration date but i highly suggest that you dont. Its not something you would want to risk. :) be safe
