I've got two for you... one tomato-based and one not. Here's an easy tomato sauce recipe: 1 lg. onion, chopped 12 fresh mushrooms, chopped 3 tbsp. olive oil 1/2 tsp. instant minced garlic 1/2 tsp. oregano 1 tsp. basil 1/2 tsp. sugar Salt & pepper to taste 1 (28 oz.) can pear tomatoes 1 (6 oz.) can tomato paste 1 3/4 c. water (and some white wine if you want a little kick!) Saute onions and mushrooms in oil in a saucepan. Add garlic and herbs and spices. Stir and simmer 3 minutes. Then add tomatoes, tomato paste and water. Simmer uncovered 30 to 60 minutes. Stir occasionally to prevent scorching. Yields 4 generous servings. Here's an easy pesto recipe: 3 cups fresh basil leaves 6 tablespoons pine nuts (walnuts can be used if you have no pine nuts) 2-4 cloves garlic 3/4 teaspoons course sea salt 6 tablespoons good quality olive oil Put the basil, nuts, garlic and salt into a food processor or good blender. Process (blend) until all the goodies are finely chopped. Add the oil and process till its all worked in together. Makes one cup. Buon appetito!

1/2 chopped yellow onion
1 small can mushroom stems and pieces, diced
1 large can hunts brand spaghetti sauce with mushrooms
1 large can hunts brand spaghetti sauce with meat
2 cloves garlic, peeled and cut on ends

Heat some olive oil in bottom of a large kettle then, add sausage and beef together and brown meat.
Then add the chopped onions and the mushrooms and saute to cook down and remove excess moisture.
When the onions get transparent and have cooked down add cans of sauce and seasonings. Then reduce heat to a low simmer and cook till small boil point. Careful to stir continually so as not to burn the sauce on the bottom of pan.
Serve over your favorite pasta or use for manicotti or lasagna.

I like to use a bottle of Paul Newman's spaghetti sauce,( your fav. flavor... ) Then I will dice some onions, peppers, and mushrooms, to give it a fresh twist. Saute the onions, and peppers, venison, and sausage. add the sauce, and mushrooms, and a Bay leaf or two, and boil over a low heat for a while to fully cook, and blend the flavors together( about 20 mins). While that is cooking boil your noodles. I like penne pasta, or angel hair pasta the best.
Butter some french bread with garlic butter, wrap it in foil, and bake it for about 20-30 mins.
Enjoy!

I like to make a smoked tomato sauce, with canned tomatoes, a little bit of chipotle chili puree (or finely diced chipotle peppers), fresh sage, brown sugar and a few drops of liquid smoke.
