Fruity Tart

Cutting up all the fruit takes a bit of time, but the rest is easy as pie. Use any fruit of your liking.

INGREDIENTS:
1 (9 inch) pie crust, baked
1 (4.6 ounce) package non-instant vanilla pudding mix
3 cups milk
1/2 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1 cup fresh peaches, pitted and sliced
1/2 cup fresh raspberries
1 cup kiwi, sliced
1/4 cup any flavor fruit jam

DIRECTIONS:
Combine pudding mix and milk in a medium saucepan. Cook according to package directions. Pour pudding into pastry shell and refrigerate until cool and firm. Arrange fruit on top of pudding layer.
Place jam in a small saucepan over low heat, stirring occasionally until runny. Using a pastry brush, coat fruit with jam. Now hide in the closet and eat the whole thing yourself.

The easiest fruit tarts are made with pie filling. The tart shell is made with1c plus 2 T flour, 1/4 t. salt, 1/2 C. marg. soft, 1 egg beaten. Refrig. 2 hrs. Shape dough in 24 balls.Put each into a greased mini muffin pan, shape into a shell. bake 450 for 5 min., reduce heat to 400, bake 8 min.
Add 1/4 C. cool whip to a can of lemon pie filling for lemon tarts, garnish with lemon peal or candy flowers.
You can do the same with other flavors of pie filling.

TROPICAL FRUIT TART

You can use whatever fruit you have on hand .

1 refrigerated pie crust (half of 15-ounce package), room temperature
1 teaspoon all purpose flour

1 8-ounce package cream cheese, room temperature
1/4 cup sugar
1/4 cup whipping cream
1 tablespoon fresh lemon juice
3/4 teaspoon vanilla extract

1/2 small pineapple, peeled, halved, cored, thinly sliced
3 kiwis, peeled, thinly sliced
1 large mango, peeled, thinly sliced
2 tablespoons apricot preserves

Preheat oven to 425°F. Unfold crust.
Using wet fingertips, press together any cracks to seal. Rub crust with flour. Place crust, floured side down, in 9-inch-diameter tart pan with removable bottom. Fold overhang in; press firmly, forming double-thick sides. Pierce bottom of crust with fork. Bake until golden, about 14 minutes. Cool completely.

Beat cream cheese and sugar in large bowl until smooth. Beat in whipping cream, lemon juice and vanilla. Spread filling in prepared crust. Refrigerate until filling is firm, about 1 hour.

Arrange pineapple, kiwis and mango atop tart. Stir preserves in saucepan over low heat until melted. Brush preserves over fruit. Chill tart up to 2 hours.

Serves 8.

It's a nice change from a regular fruit tart, but I've used strawberries, blackberries, and blueberries with great results as well.

well if you want a puff pastry crust, you can buy that, instead of the croissants dough. it's in the freezer section would be less work. here's what i do. unthaw the puff pastry and roll out to about a 12 inch square. then fold over the edges just a bit to make a rim. slice whatever fruit you want (i like peaches myself) and lay them in rows over lapping the rim some (if you don't the puff of the puff pastry will kind of take over) and each other. dot with butter and sprinkle with sugar. bake at 375 for about 20-25 min. or until the crust is golden brown. when you serve you can add the whipped cream on top, or ice cream. i think just a splash of brandy on top would be good too.

I have NEVER gotten constipated from bananas and I eat 3-4 a day per doctors orders because I take meds that deplete potassium.

You can use a regular pie recipe and make them in tart pans instead of pie pans.
