cool n easy pie:
2/3 cup boiling water
1 pkg. (4-serving size) sugar free JELL-O Brand Strawberry Flavor Gelatin( i use different flavors)
Ice cubes
1/2 cup cold water
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 50/50 Pie Crust (6 oz.) or other sugar free crust
(not regular pie crust the gram cracker kind)
STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Add whipped topping; stir with wire whisk until well blended. Refrigerate 15 to 20 min. or until mixture is thick enough to mound.
SPOON into crust.
REFRIGERATE at least 4 hours or overnight until firm. Store leftover pie in refrigerator.

24 ounces cream cheese, softened
1 cup extra-fine whole milk ricotta cheese (to refine,
process in a food processor for 1 minute)
1/2 cup sour cream
11/2 cups sugar substitute (recommended: Splenda)
1/3 cup heavy cream
1 tablespoon no sugar added vanilla extract
1 tablespoon fresh lemon juice
2 eggs
3 egg yolks
Special Equipment: 1 (8-inch) springform cake pan Preheat oven to 400 degrees F.
Spray the springform pan with nonstick vegetable oil cooking spray. Set aside. In a shallow roasting pan big enough to fit the cake pan, pour about 1-inch of water
and place it on the center rack of the oven to preheat.
In the bowl of an electric mixer, beat softened cream cheese, ricotta, sour cream and sugar substitute on low speed for about 1 minute until well blended.
In a separate bowl, using a wire whisk, mix heavy cream, vanilla, lemon juice, eggs, and egg yolks until blended.
Turn the mixer on medium speed, and slowly pour the egg mixture into the cream cheese mixture. Beat just until blended and then turn off; be careful not to over-whip.
Pour batter into the greased springform pan. Place pan into the heated water bath. Bake for 15 minutes, and then lower the oven temperature to 275 degrees F. Continue baking for 11/2 hours, or until top is light golden brown and cake is pulling away from the sides of the pan. Turn the oven off when finished cooking and leave the cake in the oven to cool for 3 more hours. (This will keep the cake nice and tall.) Then remove cake and refrigerate before serving. Serve chilled.

You can go to Splenda's website they also have beverage recipes, or Equal. If you want to make any desert sugar free, look up recipes that require sugar as the only sweetener, and replace the sugar with Splenda. Splenda is equal to sugar when baking and cooking, so you wont have to do any conversions. But if you're using Equal, go to their website, they also have a conversion chart, from sugar to equal.

SUGAR - FREE BROWNIES 2 c. graham cracker crumbs 1/2 c. chopped walnuts 3 oz. chocolate chips 6 pkg. sweetener substitute 1/4 tsp. salt 1 c. skim milk Heat oven to 350 degrees. Place all the ingredients in a bowl. Stir up until blended. Turn into a greased 8 x 8 x 2 inch pan. Bake for 30 minutes. Cut into 2 inch squares while warm.

Look up diabetic recipes. Most drink mixes don't contain alchol. You usually have to put the alcohol in yourself.

You can substitute applesauce to any recipe that calls for sugar. It makes the cookie or cake moist without all that sugar.
