Broccoli Chicken Fettuccine Alfedro
INGREDIENTS: Makes 4 Servings
1/2 pound dry fettuccine pasta
1 cup fresh chopped broccoli
2 tablespoons butter
1 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup milk
1/2 cup grated Parmesan cheese
Bring a large pot of salted water to a boil. Add fettuccini pasta and cook for 8 to 10 minutes or until al dente, adding broccoli for the last 4 minutes of cooking. Drain.
Cut chicken breast meat into bite size pieces, trimming any fat off in the process. In a large skillet melt butter or margarine over medium heat. Add chicken and saute until well browned. Add soup, milk and cheese and stir all together. Add pasta/broccoli mixture and heat through. Serve hot.

1/4 cup olive oil, divided
1 (8 ounce) package angel hair pasta
1 teaspoon chopped garlic
1 pound large shrimp - peeled and deveined
2 (28 ounce) cans Italian-style diced tomatoes, drained
1/2 cup dry white wine
1/4 cup chopped parsley
3 tablespoons chopped fresh basil
3 tablespoons freshly grated Parmesan cheese

DIRECTIONS:
Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.

Here's something I bet you never had..... BBQ Chicken and Black Bean Burritos • 1 (15 ounce) can black beans • 1 tsp olive oil • ½ tsp garlic powder • ½ tsp coriander • 12 ounces chicken (white or dark meat) • 1 Medium onion, chopped • 1 tablespoon olive oil • 6 ounces BBQ sauce • 8 ounces pepper Jack cheese, shredded, divided • 6 10 inch flour tortillas Drain and rinse beans. Heat beans with garlic and coriander in olive oil, set aside. Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes. Let cool, then shred with fingers. Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent. Add Shredded chicken and BBQ sauce, stir fry until well blended. Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos. Place in baking dish spray lightly with PAM (helps keep burritos from drying out). Heat in 350 degree oven for 10 – 15 minutes, 20 minutes if refrigerated. Sprinkle remaining cheese on top and heat another 5 minutes.

Here is a quick one if you already have everything in the house:
Tyson Buffalo strips (frozen)
Romain lettuce
Carrots
Blue cheese or Cesar dressing
Zap the chicken 4 to 5 minutes. Serve the carrots, pieces of lettuce cold. Dip in dressing as you eat. No utensils required!

Nachos, or tacos..I had ham with lipton sidekicks and brussel sprouts tonight. Last night was steak with rice and broccoli. If you want something simple, have a bbq hotdog and some macaroni salade. Or have a grilled chicken salade.

cheesy chicken..........takes 5 min to prep, and cooks all day........5-6 boneless skinless ckn breasts, 2 cans cream of ckn soup, 2 cans cheddar cheese soup, salt and pepper to taste, cook 8 hours on low in slow cooker, serve sauce over rice, potatoes, pasta or veggies..........

stouffer's lasagna, with garlic bread and a salad with choice of dressing and crouton's. strawberry shortcake for dessert. ice tea or soda to drink. don't forget the lemon, sugar, and sweet and low!

we are having a cold plate: small salad, deviled eggs, rolled ham, cheddar cheese, olives (black and green), scallions, sliced tomatoes with olive oil and fesh basil, and fresh fruit. Iced Tea with fresh mint from garden.

well i have been doing some new stuff. i'll tell you what i had.
last night ham, squash, butterbeans, and cucmber in vinager.
tonight roast beef, rutabaga, mashed potatoes. o and my mashed potatoes i use sour cream. yummy. tom. is chicken and rice with steamed carrots, broccoli, and cheese.....o i am getting hungrey
