It comes out so amazingly tender and sweet when I do that! I make sure its in a closed container so no insects get on it and keep it in the fridge the entire time. Any ideas? I've done it alot and I'm still here, but am I playing with fire?

Beef is dry aged for months under controlled conditions to break down the muscle fibers. Sounds like what you have going on also. I'd say it is generally safe as long as the beef was fresh in the beginning. If you see any discolorization it would be a good idea to not eat this. However I eat my beef very rare all the time and it has never made me sick.

meat you buy that is ready to eat stayed some time in meat fridge to get a little rancid so it's not too hard. you can get it a littl emore rancid at home if you like the taste better.

3 days should be safe assuming the meat is clean.

For 3 days in a properly maintained refrigerator is fine assuming the steak isn't "old" when you got it.

im not sure but if it is turning colors and starting to stink i would think twice about eating it, i have eaten meat that i set out in the fridge for a few days and all was well. just a judgement call on each situation i think.

no ,there's nothing dangerous in what you do...I also do it....And I also would recommend you leave your steaks in a bowl full of the mixture of milk,a little soy sauce,black pepper,rosemary and olive oil...you won't believe how tender and delicious it gets...but when you treat your steaks with milk,don't leave them in it for more than 36 hours...try it

i dont think leaving steak in the fridge for three days before you eat it is a good idea.the baterica that it picks up isnt good for you.as far as playing with fire.my opinion is yes you are playing wirh fire.please be careful.
