There are photoelectric and ionization types. See the ref.
The photodetector type shines a beam of light down a tube containing the air being sampled. A hole in the side of the tube passes any light that is scattered by smoke to the photodetector, whose amplified signal powers the alarm horn.
In the ionization type, a source of ionizing alpha radiation is beamed into an ionization chamber, where the nitrogen and oxygen molecules in the air sample become ionized and allow a small current to flow between the two plates that make up the chamber. When smoke is present, it disrupts the ionization process by attaching to and neutralizing the ions. The resulting reduction of current flow triggers the alarm.
