Depends on the couple. If they cook, the mini food chopper is excellent and what an inexpensive gift! You could always supplement it with other cooking utensils to increase the value of the gift.
If they have EVERYTHING, their invitation etched onto a framed mirror to hang in their home is also a wonderful idea.
If they're sentimental as well as religious, give them a rug AT their wedding service, which you ask their pastor/priest to bless at the wedding ceremony. Then instruct them that every time they have a disagreement they are to go to their "marriage rug", stand on it face to face (holding hands would be a nice touch), to remember their wedding vows and make up.

I have always found that an engraved gift with the bride and grooms name and wedding date has always gone over well.
I once had a brass door knocker engraved. a silver picture frame, a solid copper bowl. I even had 2 beautiful crystal rock glasses etched with there names once. They loved them. That was 15 years ago. Every time I visit them they show me they still have them and they are used all the time.

A great wedding gift is money. It is the best because the couple can buy anything with whereas a gift that is already bought offers no flexibility like money.

the one I always do last minute is a basket with some nice romantic things in it (i.e., wine glasses, a bottle of wine, placemats, nice napkins, a cheeseboard, a small photo album, candles, etc...) You can usually make one up for a fairly reasonable price if you do it yourself... just pick up some cellophane and ribbon and go to it!!!

i usually try and give a gift that is meant for the guy. even if it is for my own friends (girl) wedding because the guys get the shaft on that. look and see if they have anything on the registry for tools, camping gear etc.
