If your potatoes starts sprouting green "eyes" or white stuff then they are definitely old. I know because i just threw away potatoes like that.

first of all the "eyes" will be growing. Also the potato may be somewhat soft or wrinkly.

Potatoes last for quite awhile. If they aren't soft, runny, shriveled or tons of roots growing from them-they're ok. (A couple of roots or 'eyes' are ok, just snap them off.)

if the skin is no longer firm, but looks like it's starting to wrinkle (no pun intended) they are probably a little past when you want to use them....just means they've started to dry out....if the eyes start budding that's a good sign they're old as well....personally, I would still peel them and soak them in a little saltwater and use them in stew or soup....but I hate to waste anything!

If they have "eyes" growing out of them then they are getting old. The longer the "eyes" the older they are.
