Chocolate is a sweet treat made from cocoa beans, the fruit of the cacao plant. With its roots firmly found in Mexico, chocolate has been enjoyed for centuries. In America, chocolate manufacturing began in 1765. Beans were shipped in to Massachusetts from the West Indies in the late 1700s, and waterpower was used to grind and prepare beans.
HOW CHOCOLATE IS MADE
THE CACAO TREE
The cacao tree is a tropical American tree commonly found in wet, lowland areas. Today, cacao trees are found in the Caribbean, Asia, Africa and the South Pacific Islands. Cacao trees are sensitive and cannot be exposed to much sunlight or wind. Therefore, the cacao flourishes in the shade of much taller surrounding trees. Cocao trees rise some 40-feet high and contain 1-foot long leaves. Small, pink flowers dot the leaves and trunk of the tree. Hand-sized pods or fruit hang from various areas of the tree and trunk. Each pod contains 25-50 seeds, which are known as cocoa beans. Mature trees bear 50-70 fruits each year.
HARVESTING
Cocoa beans are harvested twice a year. During the harvesting process, the fruit is cut from the tree and split open with a large ax. The beans and pulp are then removed from the pod and placed in holes in the ground or shallow boxes, where they will begin a process of fermenting.
CHOCOLATE FACTS

White chocolate is made the same way as milk chocolate and dark chocolate -- the difference is the ingredients. In fact, because of the ingredients, many people (including the U.S. Food and Drug Administration) don't consider "white chocolate" to be chocolate at all.
Aphrodite Handmade Chocolate and HowStuffWorks.com both describe the chocolate-making process in detail. It all begins with the cacao tree, which grows in equatorial areas of South America, Africa, and Asia. The seeds of the tree's fruits are the cocoa beans, which are harvested, fermented for six or seven days, and then dried. The highest quality chocolate comes from cocoa beans that are dried naturally in the sun for a week -- shorter, artificial drying yields inferior chocolate. Next, the beans are roasted, and the shells are removed. Then the cocoa is ground, resulting in a thick liquid called chocolate liquor (it's not alcoholic). This liquor is used to make unsweetened chocolate.
For other chocolaty purposes, the liquor is pressed to extract the fat, which is called cocoa butter. With the fat removed, the liquor becomes a powder that is blended with the cocoa butter and other ingredients to make different kinds of chocolate. Plain chocolate is made of cocoa powder, chocolate liquor, cocoa butter, and sugar. Milk chocolate, of course, has milk added. White chocolate is made of cocoa butter, milk, and sugar.
After the ingredients are mixed, the product is further refined to create chocolate suitable for solid bars and pieces. It's mixed, heated, and cooled very precisely in methods called "conching" and "tempering." These processes can take up to a week for the finest chocolates.
Because white chocolate has no cocoa solids from the chocolate liquor, the FDA doesn't classify it as chocolate. However, the organization is working with chocolate manufacturers to establish a standard definition for white chocolate. Until a standard is published, check labels and beware of "white chocolate" that contains vegetable fat instead of cocoa butter. The quality and taste are inferior.

A chocolate factory owner showed us the process with images
they cocoa beans are refined between very large cylinders. Then they wait til the unwanted fumes (it actually stinks) go away.
What defines the quality I guess has to do with the cocoa oil and milk ofcourse. Switzerland is assumed to have the best milk so they are popular.
The guy cracked one chocolate and one of his own and showed the difference of texture on those. The better one had smoother lines.
That's all I remember.
My favorite chocolate brand so far is neuhaus. Not packaged but fresh from the little chocolate shop :)

It comes from the Cocoa plant and did you know that if you eat approximately 26 pounds of chocolate in one sitting it will give you the same buzz as cocaine...? im not about to try it but its true.
