Three weeks (refrigerated) is my personal record, but I would not recommend it.

Safe leftovers have to start with food that is safe. Always follow the four simple steps to food safety:

Clean
Separate
Cook
Chill

Use refrigerated leftovers within three to four days. Freeze quantities that can’t be used by then. Since bacteria can’t grow at freezer temperatures, food is generally safe indefinitely while frozen. However, use frozen foods in a reasonable length of time for best quality.

In your refrigerator at 38 degrees Fahrenheit:
Fish 3 days
Animal meat 7 days
Pasta 10 days

Unrefrigerated, 2 hours for all.

Frozen (0 degrees F) add two weeks to above times.

Leftovers of what? Were they immediately and properly stored and refrigerated? What ingredients?

As a rule 2-3 days and then toss 'em.
