If it is rice, yes. Different sorts of pastas and foods with milk will scorch if they stick to the bottom. Turn the heat to low, and cover. If it starts to boil over no matter what, cock the lid to the side a bit to let some (not a lot) of steam out. Good lucK!

That depends. If the recipe says to cover and let simmer for a certain number of minutes, and that's it, then I wouldn't stir it. Sometimes a recipe says "let simmer, stirring occasionally" in which case you want to stir. But I would take the "cover" part to indicate no stirring. Good luck!

Usually when a recipe call for simmering it is to let all the flavor's come together. The best way for this to happen is to let it sit without stirring. However, you may need to turn down the heat to keep whatever you are cooking from sticking.

Only stir if the recipe says to do so. Just make sure the flame is very low because when the lid is on, it takes very little heat to keep it at a simmer.

If the recipe does not say stir, LEAVE IT ALONE! It usually makes a big difference in the end product.

Usually it will also say "stirring occasionally". I would let it simmer a while, checking on it now and then, but note that stirring will interrupt the simmering process.

yes, you need to stir, no matter what it is. just lift the lid and stir once every few minutes until whatever you're cooking is done.
