uhhh - I wouldn't. He really doesnt' need to know; they came before him & aren't pertinent to your relationship with him. Unless you feel like sitting through a recitation of his former crushes?
Some guys can't handle knowing who you crushed on before he entered your life & became the center of your world (how they see themselves, ya know?) Maybe ya'll have a strong enuff relationship to withstand that, but I'd have to say no.

On a somewhat more serious note, I would like to know what her previous relationships were like, what sorts of people she found interesting, and so on, they are part of her life history and might help me understand her better.

Not a good idea. Your boyfriend might have a security issue, and if you do this he may not trust you if he ever see's you talking to any of them.
