Well, I doubt that this can be done without her feelings getting at least a little hurt. But the more you cushion your comments with, thank you, and I appreciate the work you took cooking this, etc. Then maybe start a discussion on different ways to cook, different spices that may or may not be good, etc. Remember, she is going to be eating the food also, so she feels she is doing a good job, cause she likes it. Just be sensitive to the work and effort she put into cooking.

You don't!! If you cook better then perhaps you should cook more meals and let your mother inquire upon how you made them so tasty. I did show my mom how to use different herbs and spices but only after I moved out of the house and she tried some of my cooking. I would not dare offend her or make her think I was ungrateful for her making me meals by telling her she needs to improve. Yikes!

You can cook with her - not only to build some family time but you can improve your food.
Or tell her upfront, just ask about her mom's cooking and if she liked it. She might say she didn't and that would give you a good door to talk.

Offer to help cook or cook instead of her. Definately make small remarks like "I heard it was good this way..." or "It worked out when I tried it this way..." or "Let's experiment with cooking this way....". These should be nice little hints that don't tell her she can't cook. :)

oh my God. i have been suffering from this all my life specially that i do not cook myself. when i came home from abroad; i did a big mistake i told her i miss eating home-cooked food. and she cooked me something the taste of which shall haunt me for the rest of my life. but moms are too wonderful to hurt. swallow your bitterness and smile

Don't tell you mom that, if you have a problem with her cooking, then you should take up the resposibility to do it, you should be grateful that she is providing for you.

Offer to cook something with her. Also observe what she is doing wrong and gently tell her---e.g. if she puts too much of something, say, "have your tried this?". A lady I know used to put too much salt. I made a casserole with her and substituted squeezed-lemon juice.
