The eyes and even sprouting potatoes are safe to use but they may not keep
well. Also, they may blacken when cooked. Always remove the sprouts before
using the potato. However, green potatoes or any green part of a potato
should never be eaten -- the green material contains the alkaloid,
"solarin" which is poisonous. Green areas should be cut off and discarded
before the
potato is used.

Solanum tuberosum poisoning

the poison is called Solanine (very toxic even in small quantities).
The toxin is found throughout the plant but especially in green potatoes and in the new sprouts. Never eat potatoes that are spoiled or green below the skin. Always throw away the sprouts.

Potatoes that are not green and have had any sprouts removed are safe to eat.

No, they are not poisonous. However, I do find myself uncomfortable after I make a hole in one end of the potato and have sex with it. The eyes give me this guilty look.

I don't think the eyes are poisonous. I think the berries that grow on the potato plants are.

No. The eyes are where a root will grow. If you get potatoes that have the little roots, cut a wedge from the potato with the root on it, plant it, and it will grow a potato.

Could be wrong but I have heard they are a member of the Ivy family. You shouldn't eat anything green on a potato, but all you really need to do is peel that part before you cook it.

potato's are not poisonous my husband uses them on his eyes when he gets welding flash an it helps alot.
