I love double fried potato's. If you want really crisy home made fries. Fry the fries until golden brown, then take them out of the oil, place in water for a few minutes then put back into the water. Wow, crispy on the outside soft on the inside. Yummy!

I like to make Au Gratin potato casserole. You peel and slice potatoes, mix flour and milk together and pour it over your sliced potatoes in the casserole dish add salt and pepper, and your favorite shredded cheese, Swiss or cheddar. You can also top it with buttered bread crumbs. It needs to bake for about an hour and a half. It is really good though.

Mashed potatoes rock. I find instead of using milk you use light cream instead it makes them so much more creamier.
My second favorite is baked potatoes with butter and sour cream.

Fried - big fat greasy chips, with plenty of vinegar and lots of ketchup on the side. When I make them myself I leave the skin on the spuds. Even better!
