"TACO BITES

6 tbsp. butter
2 to 3 tsp. dry taco seasoning mix
8 c. Corn Chex cereal
1/4 to 1/2 c. grated American cheese (Gold can)

Place butter and taco seasonings in 8 x 12 inch dish and melt until butter bubbles. Add Corn Chex and stir to coat pieces. Sprinkle with cheese; stir well. Bake at 200 degrees for 1 hour, stirring occasionally."

"VEGETABLE BEEF PIE

1 egg, slightly beaten
1/2 c. catsup
1 tsp. salt
1 tsp. onion powder
1/2 tsp. chili powder
1/4 tsp. pepper
1 c. Bran Chex (or use bread crumbs
1 lb. ground beef
2 c. canned mixed vegetables (drained)
1/2 c. shredded American cheese

Combine first 6 ingredients in a bowl. Stir in Chex; let stand for 5 minutes. Stir mixture to break up Chex; add ground beef. Press into a 9-inch pie pan. Toss vegetables with 1/2 of the cheese. Turn vegetable-cheese mixture into meat crust. Sprinkle with remaining cheese. Bake at 350 degrees for 30 minutes. Let stand 5-10 minutes before serving."

Ingredients:
3 cups Rice Chex® cereal
3 cups Corn Chex® cereal
2 cups bite-size cheese crackers
2 cups bite-size pretzel twists
1 cup salted peanuts
3 tablespoons vegetable oil
2 tablespoons water
1 package (1.25 oz) Old El Paso® taco seasoning mix

Preparation Directions:
1. In large microwavable bowl, mix cereals, crackers, pretzels and peanuts.
2. In small bowl, stir together oil, water and taco seasoning mix. Pour over cereal mixture, stirring until evenly coated.
3. Microwave uncovered on High about 5 minutes, stirring every 2 minutes, until mixture begins to brown. Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.

I just checked www.chexmix.com and they had lots of Chex Mix recipes, but none of them were cheddar.
