If you keep moving around a lot, you will remain barren and without anything beautiful in your life. Moss is just plain lovely to look at, touch and gather to put into a garden.
Rocks are cold, hard and bland. Of course, unless it's a decorative stone.
But, this could also mean that if you are constantly on the roll you will never have to answer to any commitments, or responsibilities. And you don't have to worry about caring about anyone but yourself. Sounds sort of lonely and sad to me.

It is a true fact used as a saying. A stone that has been left alone for a long time will have moss growing on it. If the stone gets moved around and moves around a lot, the stone will have no moss growing on it (the moss falls off and won't grow on unstable places). The meaning of the saying is: If you keep on changing your mind, you won't be able to succeed in life.

Moss grows on things that just lie there and do nothing. If you're the "rolling stone" you're not just lying there doing nothing - you're doing SOMETHING. Therefore, the moss has no place to grow.
