Depends on how you are saving it. If it is being saved as a picture (jpg, bmp, tif, etc) then not really. It is possible but a giant pain. If it is being read with OCR and saved as a document then you should have no trouble editing it.

You need OCR Software (http://en.wikipedia.org/wiki/Optical_character_recognition ). OCR Software takes documents you scan in and converts them to editable text. Most scanners on the market today (I know HP does) comes with some kind of OCR software.
