Baked Chicken -
Just season the meat well with some seasoning salt & garlic or salt, pepper & garlic, put in a baking pan & cover. Cook in oven @ 325 degrees. I always let mine cook for at least 3 hours. After it's cooked for about 2 hours uncover it so the outside can get brown. When it covered the mean gets tender, but it's all white & doesn't look appetizing. Also, turn the meat every hour. Once the chicken is a nice brown & the juices on the bottom of the pan have become sticky & somewhat thick it should be finish. I recommend using a disposible foil pan.
Sweet Potatoes -
Peel & cut into small chucks (not too thick).
Add to a medium pot with white sugar, cinnamon, a little vanilla extract, enough water to cover the bottom of the pan, 1 capful of lemon juice & some margarine. Mix together so that all the potatoes are covered with some of the sugar mixture. Bring to a boil & then turn flame down low. Stir & turn the potatoes about every 15 minutes so that they all spend time cooking in the sugar mixture. They are usually ready in about 45 minutes. Taste them & if not sweet enough add more sugar &/or cinnamon. Sometimes if I have the oven on, I'll put them in a foil pan & into the oven so they get softer (this is as well as cooking on the stove).
They so great with macaroni & chesse.

The Betty Crocker website has a lot of simple yet tasty recipes as does Kraft Foods. Don't forget that their recipes give brandnames, but you can use any brand of sour cream or cake mix, etc. Enjoy learning to cook. I love it and still learn new things after 45+ years of cooking!

Good soul food is cornbread and greens.I like to mix greens(cabbage,turnip greens,etc.)Any kind of green can be boiled up together.Then you want some cheesy macaroni n cheese,some fried or baked chicken,squash(fried or steamed)purple onion,tomato slices,pinto beans,anything like that.I love soul food.

Ingredients:
Sauce Ingredients:
4 tablespoon catsup
2 tablespoon vinegar
1 tablespoon lemon juice
2 tablespoon worcestershire
2 tablespoon butter
2 tablespoon brown sugar
1 tablespoon white sugar
1 teaspoon mustard
2 teaspoon paprika
1/2 teaspoon chili powder
some black pepper & red hot sauce
Fried Chicken
Instructions:
Combine sauce ingredients and mix them to create the sauce.
Dip each piece in sauce.
Cook in a dish or pan covered with aluminum foil for about 2 1/2 hrs at 350 degrees.
Ingredients:
3 cups whole wheat flour
2 table spoons of black pepper
2 table spoons of seasoned salt
2 table spoons of garlic powder
1 half cup peanut oil
1 whole chicken cut in parts (or use only chicken breast)
Instructions:
In a large bowl add flour, pepper, seasoned salt and garlic powder.
With hand mix ingredients.
Place peanut oil in large skillet and heat at low heat.
Flour chicken parts with mixture from bowl and place them in skillet.
Brown chicken on each side.
Cover skillet and place in pre-heated oven at 350 degrees for one hour and a half. Be sure to turn chicken on each side in order for it to cook thoroughly.
Five minutes before removing chicken from oven, add two tablespoons of water to skillet and cover; continue cooking chicken for the remaining five minutes.
Fried Catfish
Ingredients:
1 pound of fillet catfish
1 cup of corn meal
1 cup of flour
1 teaspoon of Lawry's® Seasoned Salt
1 teaspoon of Pepper
Instructions:
Mix flour, seasoned salt, and corn meal and cover both sides of catfish strips with the dry mixture.
Then fry in about a teaspoon of oil in a pan, until both sides are golden brown and the fish is crispy.
Ingredients:
Basic Collard Green Recipe
4-6 bunches of collard cleaned
10 slices of bacon (your choice)
2 smoked beef neck bone
1 large chopped onion
2 Cloves garlic, minced
seasoning salt to taste (*need a good amount of salt)
1 bunch of green onions (optional)
black pepper to taste
12 cups of water (* may need a little more)
Instructions:
Lay collard greens on top of each other, (no more then 4 at a time) roll and then cut in half with a knife.
Line the bottom of a large stock pot with the greens, then layer with bacon, greens, neck bones, greens, and so on.
Add the water to the stock pot
Now add the 1/2 of the chopped onion, pepper and salt to taste.
Let mixture boil for 10 minutes.
Now add the other half of the onions and more salt and pepper to taste if desired to the stock pot.
Rapidly boil for 35 minutes.
Reduce heat and let simmer for 1-2 hours. (or until greens are tender)
Serve with green onions.
Peach Cobbler
Ingredients:
1 large can of Delmonte® Sliced Peaches
1 stick of butter or margarine
1 1/2 cups of granulated sugar
1 1/2 teaspoon of vanilla flavor
1 1/2 teaspoon of cinnamon
1/2 cup brown sugar
1 box of Pillsbury® pie crust mix - follow the directions to make the pie crust
Instructions:
Mix peaches and other ingredients in a large dutch oven pot, and bring to a boil.
Pour ingredients into a large casserole dish.
Roll the pie crust into 1 whole sheet to cover the dish, or
cut it into strips and place over the peach mixture.
Preheat oven to 350 degrees
Cook until golden brown approximately 1 hour
Best serve with vanilla ice cream.
