I have to as well. It seems the ice cream coats the throat and leaves a funny feeling that I want water to clean it out.

The temperature of your mouth falls after eating icecream.It one of the temperature g-spots.Which is why thermometers are placed inside the mouth,btw.So,to,bring the temperature back to normal,you salivate.Or,if water is available,you drink water.
