What causes dark bones in cooked poultry?

The bone marrow causes the bone to appear darker when it has been frozen more than once. The more the product is exposed to severe temperature variations the darker the bones will appear as a result of the marrow leaching from the inside of the bone to the outer portions of it during the cooking process.
