The grading of meat and poultry are done by Federal Inspectors at the processing plant from anti-mortem to post-mortem. They judge the animals health, meat quaility, fat content. On larger cuts of meat you will see the inspectors stamp. The stamp indentifies the inspector, the date and the sluaghter house.

No. It's inspected during and at the end of it's processing in the facility it's processed in. It then goes to into a cold storage where it awaits to be shipped to a store near you.
