Use a little more milk instead of water and also use a little bit of extra virgin olive oil about 3 Tablespoons.

Three tablespoons of mayo or salad dressing will keep the cake both moist and soft. You can us it with or without eggs.Keeps the cake from drying out. If you substitute 7-up for the liquid in the cake it will raise about half again as much as it does without it
