Pizza Bianca
4 Individual Pizza Dough Balls- Defrosted

2 Cups Fresh, Washed Arugula

1 oz. Shaved Parmesan Cheese

Olive Oil For Drizzling


Cook the pizza dough completely, then top with first the Prosciutto, then the arugula, and finally the cheese. Drizzle with a little olive oil over each pizza and serve. We like to use hot oil that we have made by soaking red pepper flakes in a good quality olive oil for a week or more. It adds just an extra "bite" to the pizza!

Tip: I use a bakers peel dusted with cornmeal to easily slip the pizza dough onto the grill, as well as turn it over.

Healthy Whole Wheat Pizza
2 Balls Basic Pizza Dough Made With Half White Flour And Half Whole Wheat

1 Cup Prepared Tomato Sauce

1 Package Baby Spinach

1 Garlic Clove, Finely Minced

1 Tablespoon Olive Oil

1/4 Cup Roasted Peppers Cut Into Strips

1 Cup Cooked Diced Chicken

1 Cup Fat Reduced Mozzarella Cheese


Preheat your oven to 425 degrees F. Heat the oil in a pan and sauté the spinach with the garlic and a spoonful or two of water until wilted. Prepare your pizza dough, and after the first rising by rolling it into a 12 inch circle and laying it across a pizza pan prepared by lightly oiling or sprinkling with cornmeal. Spoon the sauce over the crust and add the other toppings, starting with the spinach and finishing with the cheese. Bake for 25-30 minutes or until puffy and golden

pizza magrita
4 Individual Pizza Dough Balls - Defrosted

Cups Canned Plum Tomatoes

3/4 Cup Fresh Chopped Basil

2 Cup Olive Oil

Tablespoons Minced Garlic

1 1/2 Cups Grated Romano Cheese

1 1/2 Cups Shredded Mozzarella or Fontina Cheese

3 Tablespoons Fresh, Chopped Parsley


Follow Instructions for Grilled Pizza, removing the pizzas from the grill after grilling 30 seconds on the second side. In a bowl, mix tomatoes, basil, 1/4 cup oil and the garlic. In a separate bowl, mix the two cheeses. Spread some cheese mixture over each pizza, then dollop each with the tomato mixture. Do not spread. Sprinkle each with parsley, place back on the grill. Close the lid and cook just till cheese is melted, about another minute. Serve immediately, using remaining oil to drizzle over top, as desired.

You can buy pre-made Gnocchi in the grocery store-or look online for any easy recipe Gnocchi with gorgonzola - Gnocchi al gorgonzola Ingredients: Basic potato gnocchi recipe 10 oz. gorgonzola cheese 5 Tbsp. heavy cream 1-1/2 Tbsp. butter fresh ground Parmesan Instructions: 1. In sauce pan over a low heat melt the gorgonzola together with the butter and heavy cream. 2. As soon as you put the cheese on you can drop the gnocchi into the already boiling water. 3. Mix the cheese as it melts. 4. When the gnocchi are done drain well and add to the cheese. 5. Mix well and serve with fresh ground Parmesan cheese. Notes: Don’t substitute gorgonzola with blue cheese. Blue cheese will not melt well in this dish whereas gorgonzola will and be very creamy too.

Creamy Itallian Rice
Prep time: 10 minutes
cook time: 10 minutes

2 tbsp butter or margarine
1 medium onion finely chopped
1 1/2c. instant rice
1 1/2c. thinly sliced fresh mushrooms or 1 can
1 can chicken broth
1/2c. water
3tbsp chopped parsley
1/4c parmesan grated cheese

heat butter in a frying pan. saute the onion until tender and the mushrooms until brown
add the rice cooking and stirring for 2 minutes or until the onions turn brown.
mix the broth and water together. slowly add to the rice stirring constantly while the rice obsorbs the liquid.
just before serving stir in the parsley and cheese.
serve immediately or in micro the next day is good too.
makes 4 servings
