I really like pineapple salsa, it goes great with chicken or fish. here's the recipe.
1 1/2 c. chopped pineapple
1/4 c. chopped red onion
2 tbsp. sugar
1 tbsp. lemon juice
1/2 - 1 tsp. chopped jalapeno pepper
1 tsp. finely minced ginger
1 tbsp. fresh chopped mint
Mix ingredients in glass bowl. Adjust seasonings to taste. Refrigerate at least 4 hours.
Makes 1 3/4 cups.

Make some grilled pineapple salsa to go along with some grilled tuna or chicken!
GRILLED PINEAPPLE SALSA:
1 whole small ripe pineapple
2 teaspoons Asian-style chili oil
Salt
1/2 cup red wine vinegar
1/4 cup lime juice
2 tablespoons bottled Southeast Asian-style fish sauce (nuoc cham)
2 tablespoons soy sauce
1/3 cup peanut oil
1/4 cup Asian-style toasted sesame oil
1/4 to 1/2 cup diced sweet onion (such as Maui or Vidalia) or red onion
3/4 cup peeled, seeded, and diced cucumber
3 tablespoons chopped fresh mint leaves
1 tablespoon chopped fresh basil leaves
1 teaspoon sugar
1/2 teaspoon white pepper
Preheat a very hot fire in your grill. You can do this indoors or out.
To prepare the pineapple cut off the top leaves and a ring off the bottom of your pineapple. Using a very sharp knife cut down the pineappl, removing the rind, using vertical cuts, until just a few eyes remain. Remove whatever eyes remain. Cut the pineapple in nice 1" thick slices.
Using a pastry brush paint a thin coating of the chili oil on your pineapple rings, sprinkle them lightly with salt, and then place on the grill, cooking for about 2-3 minutes on each side (don't move them around!). They should get a little soft and and have a nice grill mark on them. Allow the slices to cool and then cut the fruit away from the hard core, which you will not be using in this recipe. You can eat it if you want to! Now coarsely chop enough grilled pineapple to get 3/4 of a cup.
Mix the vinegar, lime juice, fish sauce (I use Nam Pla), and soy sauce together in a nonreactive mixing bowl, like glass or plastic. (You can use an immersion blender or do this in a food processor if you prefer ). Holding a whisk in one hand, slowly pour in the peanut and sesame oil into the vinegar mixture as you are whisking, blending or processing. Once you are done with that switch to a spoon and gently add the pineapple, as much onion as you want, and then the rest of the ingredients. Cover with plastic wrap and keep cool in the refrigerator until you are ready to serve. You can make this up to a day ahead. This salsa would be great on grilled chicken or fish.

This dish is a tasty accompaniment to roast pork or ham. It's sometimes called pineapple casserole or scalloped pineapple.
INGREDIENTS:
3 eggs
2 1/2 cups crushed pineapple
2 tablespoons sugar
3 tablespoons flour
1 1/2 tablespoons butter -- melted
1 1/2 tablespoons lemon juice
pinch salt
PREPARATION:
Beat eggs until light; stir in remaining ingredients. Pour into a buttered baking dish and bake at 350° for 45 to 55 minutes, or until the consistency of rice pudding. Serve with ham or roast pork.
Serves 6 to 8 as a side dish
pineapple cheese pie-
INGREDIENTS:
1 c crushed pineapple, drained
2 c sugar
1 tb cornstarch
1 c coconut
4 eggs
1 stick of margarine
1 ts vanilla
1 pie shell, baked
PREPARATION:
Mix all the ingredients; pour into pie crust. Bake at 350° 30 to 40 minutes, until done.
Pineapple cream dessert with pineapple tidbits, marshmallows, cherries, and whipped cream, topped with toasted almonds.
INGREDIENTS:
1 can (20 ounces) pineapple tidbits
4 ounces miniature marshmallows, or cut large marshmallows into eighths
1/4 cup maraschino cherries, cut in quarters
1 cup heavy cream, whipped
1/4 cup blanch slivered almonds, toasted*
PREPARATION:
Drain pineapple, reserving syrup. Combine pineapple, marshmallows, cherries, and 1/4 cup of the reserved syrup. Let stand for 45 to 60 minutes to blend flavors. Fold in whipped cream. Spoon into dessert cups and sprinkle with toasted almonds.
Serves 6.
This easy salsa is a delicious addition to a meal with fish or seafood, pork, or chicken.
INGREDIENTS:
1 cup diced fresh pineapple
2 tablespoons minced red onion
2 teaspoons chopped cilantro
2 tablespoons minced sweet red bell pepper
1 tablespoon lime juice
dash salt

Make a chicken breast salad. Cook chicken breast in chicken broth until done, cut it, cut the pineapple, add a sliced banana, a red bellpepper, in pieces, and as a dressing use mayonnaise mixed with plain joghurt. Add salt, pepper, cayenne pepper, and curry. Let it sit in the fridge for at least 2 hours.
Serve cool.

You can try some shish-kabob and put in on the skewers with some chicken or beef cubes, bell peppers and onions. Cook it on a grill for a few minutes per side and serve with a rice dish and some vegies.

You could crush some of it up and mix with cool whip. put it on or between some nilla wafers or stella doro puff cookies. It's sooo goood. Or cook chicken and cook the pineapple on it mixed with honey and heinz 57. Invite me over for supper.
