i soak the fish in lemon juice first before cooking then I use egg water mixture 1 egg with 1/4 cup of water mixed. then coat fish with a flour cornstarch seasonning mixture. IN ziplock bag combine flour, seasoning, corn starch, Depending on how much fish use 1 cup of flour 1/4 cup of cornstarch and seasonnings according to taste. shake and put in frying pan with 1 inch of Canola oil hot

So as to make fried fish taste better, get 1 tspoon of salt and mix it with lime juice. Then rub the mixture to the fish and fry the fish after 10 minutes.......... Yummy :) Now I'm hungry .......

It depend on what kind of fish, but on white fish and catfish I have used the old ranch dressing that comes in a package (not a jar) and mixed it with a little flour to make it go farther. I like the taste that it brings to the fish. I would not recommend with salmon. The only way I like salmon is making patties like you would meatloaf or meatballs, with egg and crackers.

You could bake it instead of frying, try baked breaded fish. Try the recipe in the following link, you can add some zest by using season all or lemon pepper to the bread crumbs, adds an extra something. You use less oil with this method.

I coat my fish in all purpose flour then dip them in and egg buttermilk bathwith a touch of texas pete hot sauce then into corn meal seasoned with old bay and sea salt and fresh ground pepper refridgerate for at least and hour fry in peanut oil at about 350 until they float mmm mmm mmm good

If you like it spicy sprinkle a little salt and madras curry powder over both sides of the fish , leave to marinate for 5 mins or so and fry!

Well you can use beer to make the batter that adds some extra taste.
You can use panko bread crumbs to coat it. Thats very good.
You can flour the fish put some coriander or your favorite spice sprinkle it on the fish and then batter it.

Seasoning of course, but dont' forget about:
~~Cut dark spots out of fish.
~~Use fresh oil. Or peanut oil. Peanut can be strained thru a coffee filter and all other flavors are removed.
~~Make sure your oil temp is 350-375ºF. Any hotter, you'll scorch your oil (and fish). Any cooler, your fish will just sit there absorbing oil.

My family likes to salt and pepper the fish and then baste it with good old yellow mustard and dredge through a cornmeal and flour mixture. Don't forget to salt and pepper the flour mixture. It needs to be tasty also.( also when you fry chicken or beef or etc.)

Any batter, such as breaded, cornmeal, etc.
Also try cooking fish in Lemon, Garlic, Butter, and/or Dill. You can also cook it with Wine. Tartar, or a Dill sauce also adds a nice touch.
