Grill out, it's too hot to cook indoors. I'd go with kebabs of chicken, green bell pepper, red onion, and tomato marinated in your favorite sauce and skewered on bamboo. Sounds good eh.

I use a GREAT cookbook, Saving Dinner, to help with meal planning. The meals are nutritious, relatively easy, and really really good. Every week of the entire year has 6 recipes-- none are repeated. One main dish plus side dish suggestions. The grocery list for the week is included, including the ingredients for the sides. For more ease, I just take the cookbook in the grocery store with me. As an added bonus, quick tips and other cooking suggestions are throughout the book.

Veggie Splits!
Per person you will need.
1/2 Cucumber, 1 Bell Pepper an 2 Medium Tomatoes. Cottage cheese, cocktail shrimp, and some cold salad (crab salad, chicken salad, tuna salad, pasta salad your choice.) And A cherry tomato.
Now your going to make a split (think banana split only healthier)
Peel the cukes, then split Length wise twice so you end up with 4 long pieces. Place the cukes as if they were the bananas. (2 per person). Cut the top of the pepper off and clean it out. Cut the tomato open like a flower -- not all the way through. Then put a tomato, pepper and tomato as if ice cream scoops.
In the first tomato, scoop cottage cheese til filled. In the put the salad you chose, in the other tomato curl the shrimp over the edge with your cocktail sauce (if desired in the middle of the tomato). On the GP, put one cherry tomato. You can drizzle with your favorite dressing if you so desire. Makes a yummy summer dinner.

A nice meatloaf sounds good. Maybe some crisp greens to go with it, salad ain't it. Good ol Americana.
Unless you're thinking about a little romance. Fettuccine works with a little wine.
Or even fish, maybe Red Snapper or Trout with a White wine. A lite side dish tho'. I mean potato salad and such would be no-no's.
Maybe served on rice. That sounds good. Oh, not to much rice tho', a thin bed of it. After all, it is the fish that is supposed to be the entree :).

Egg Curry
Ingredients:
6 hard boiled Eggs
1 Onion
60 gms Ghee
½ cup Water
½ tsp Garlic paste
250 gms Tomatoes
1 tbsp Lemon juice
1 tbsp Curry powder
Method:
Peel eggs and cut into half lengthwise.
Melt ghee in a frying pan, sauté onions and garlic until onion is tender. Add curry powder, sauté one minute.
Now add tomatoes, lemon juice and water and bring to boil. Reduce heat to low, cover, simmer for about 10 minutes.
Add eggs, cook until heated through

4-6 chops
1 onion, chopped
1 can cream of chicken soup (don't add liquid)
3 T Catsup
2 T Worcestershire
Brown pork chops and pour off grease.
Place them in a baking dish.
Mix remaining ingredients in a bowl and pour over chops.
Bake at 350* for 1 hour, and serve with pasta or rice.
Enjoy!

Chicken, turkey or lamb curry with boiled rice served with a crunchy salad side( diced tomato, onion, cucumber,fresh coriander, lime juice, salt and sugar)..have bananas or apples fritters as dessert.
Fry in 2 tbsp of oil, cumin,cardamon and mustard seed
add 1 sliced onion , leave it to brown, add 4 green diced bird eye chillies
add coriander, turmeric, chili, curry powder(1 tsp), salt and pepper and stir fry.
add the meat and when its well coated cover the pan. don't add any water 'cause the juices of the meat will do that.
add diced 2 diced tomatoes, and a diced potato
when its nearly done, taste then add 250ml of cream( single or double), stir well, then add on top of it freshly sliced coriander( cilantro) then serve hot !!! enjoy

make some healthful spring rolls!! make some seviche of tuna or salmon...sushi grade...marinate it in 1/2 lime jice and 1/2 lemon juice. add 3 oz of white wine...add adobo and white pepper and chinese 5 spice to taste...throw in some soy sauce and dribble in some sesame oil... the fish must be cut into small strips. marinate for 30 minnies then...
julienne some green peppers, red pepers, jalapeneos, scallions, carrots, celery, radishes or diakon, chiffonade some cilantro, and brunious some garlic...
add to a softly mostened rice paper skin...soak the skins for 1 minute. and pull it and place it on the cutting board...
wrap em and eat em!!!

all meals come with choice of ice tea, coffee, and or soda.
don't forget the sugar, cream, sweet and low, and lemon.
strawberry short cake or lemon ice box pie or key lime pie for dessert
