It is to fulfill specific scripture verses.
Psalm 30:3; 41:10, 118:17; Hos 6:2 - He will be raised to life on the third day - Acts 13:33, Matt. 28:6; Mark 16:6; Luke 24:34,46 - Jesus was raised to life on the third day.
Jonah 1:17 - three nights and days in the belly of the whale foreshadows Jesus' death and rising on the third day.

How do we know that Joseph really buried him? remember the chamber was huge and more like a house with a huge rock as a gate. How do we know that Joseph was really protecting him from the sadistic jews and had to 'play-act' the whole scene to make the jews think that Jesus was really dead? Infact the jews got suspicious of the whole thing that they decided to check up to make sure he really had died...why did jesus hide in the garden and people thought he was the gardener? If Jesus had died and resurrected and can fly here and there and appear/disappear at will, why was the stone rolled from the grave? He could just walk through it...?

Jesus rose on the third day because the number three is associated with perfection. Jesus lived a perfect life, the Holy Trinity, etc. It's symbolic.

Why did Jesus rise in the third day?
3 is the number of Divine completion. and the prophets had already made known this fact.
Jesus said only the sign of Jonah would be given to prove that he is the Son of God.
Jonah was swallowed by a whale and resurrected after 3 days & nights.
Jon 2:3 For thou hadst cast me into the deep, in the midst of the seas; and the floods compassed me about: all thy billows and thy waves passed over me.
Jon 2:4 Then I said, I am cast out of thy sight; yet I will look again toward thy holy temple.
Jon 2:5 The waters compassed me about, [even] to the soul: the depth closed me round about, the weeds were wrapped about my head.
Jon 2:6 I went down to the bottoms of the mountains; the earth with her bars [was] about me for ever: yet hast thou brought up my life from corruption, O LORD my God.
Jon 2:7 When my soul fainted within me I remembered the LORD: and my prayer came in unto thee, into thine holy temple.

Jesus rose on the third day because it was a fulfillment of prophecy. Jesus said, "As Jonah was three days and three nights in the belly of the whale so shall the son of man be three days and three nights in the belly of the earth."
It was a sign to prove He is the Messiah.

A lot of reasons, but if you remember your Bible stories, He
said that He would rise on the Third day, when telling about
the prophet Jonas who was in the belly of the great fish for
three days. Read John 1;17, and Matthew 12;40. Thank-you.

Gospel of Matthew,Chapter 12,Verse no 38
The jews said to Jesus pbuh, "Rabbi(Lord), why don't you give us a sign."
(They don't believe in Jesus pbuh's miracles and ask for another miracle to prove that he was sent by the God.)
Jesus pbuh replied, in the next verses
Gospel of Matthew,Chapter 12,Verse no 39-40
"You evil and adulterous generation, seeketh after the sign. No sign shall be given to you but the sign of Jonah. As Jonah was 3 days and 3 nights in the belly of the whale, so shall the son of man be 3 days and 3 nights in the heart of the earth."
Therefore, to fullfill the prophecy given to the Jews, he rised in the third day.
But the question is, is the prophecy fullfilled?
The answer is NO. Why? Take a deep look at the verse.
First.
When Jonah pbuh was thrown from the boat and the whale swallowed him, he was alive. When he was in the belly of the whale, he prayed to the God, showing that he was alive. When the whale vomitted him out, he was alive.
But Jesus pbuh was sealed in his tomb, he was dead (crucified by the Roman). And Christians believe he was resurrected. What is the meaning of resurrect. An act of rising from death. So before he came out from the tomb, he was a dead man. Jonah pbuh was alive but Jesus pbuh was dead. How can the prophecy be fullfilled?
Second. Note the phrase '3 days and 3 nights'. Jesus pbuh stressed the phrase twice. As Jonah was 3 days and 3 nights in the belly of the whale, so shall the son of man be 3 days and 3 nights in the heart of the earth. He rised on the 3rd day. Was the prophecy fullfilled, then? NO. He died on Friday for the sake of humanity and put on his tomb late Friday evening. (Deuteronomy, Ch. 21, Verse 23).
Later on, in Gospel of John, Ch 20, Verse 1,"It was the first day of the week, Sunday morning, that the tomb was found empty by Mary Magdalence."
So, Friday evening to Sunday morning, can it be considered 3 days and 3 night? It can be considered as 3 days but it can never be considered as 3 days and 3 nights. Why don't Jesus said, "As Jonah was 3 days in the belly of the whale, so shall the son of man be 3 days ts in the heart of the earth." Instead, he said, "As Jonah was 3 days and 3 nights in the belly of the whale, so shall the son of man be 3 days and 3 nights in the heart of the earth."
So, Jesus did not fullfill the prophecy. That is one out of many other contradictions in the Bible.

Let's see, he was buried Friday evening, in the grave Saturday morning through Saturday night, rose Sunday morning...sorry, but no amount of mental gymnastics will turn that into three days and three nights. Jesus compared himself to Jonah in the whale's belly, while failing to stay dead the same amount of time that Jonah was swallowed. Thus, Jesus is a FALSE PROPHET.

The disciples of Jesus pointed out to him the beauty of the Temple. Jesus said "Tear This Temple down and it would rise in three days." He was talking about his dying and rising not the physical Jewish Temple.
