My mom (hey, I'm a pre-teen!) is always complaining that theres nothing new to cook for dinner, or at least something we dont eat very often. Normally, we have Chicken Tom Yum, meat loaf, spaghetti/ lasagna, or Mac and Cheese. Some ideas or recipes will be helpful, thanks!

One of the easiest and yummiest things I make is cotoletta milanese. That's just a fancy way of saying "breaded cutlet" and you can do it with pork chops, veal, or chicken breasts.

Start with a boneless, skinless piece of meat, and take off any excess fat that you can. Then with a meat pounder, pound it out flat (maybe about 1/2" thick). Dip it in egg, then cover it in breadcrumbs, and fry it in a little olive oil over medium heat (heat the pan first, then add the olive oil, and when the olive oil is hot put the cutlet in). It doesn't take long--maybe 5 minutes each side? I judge by the color of the bread crumbs on the outside, or you can cut one open to make sure it's cooked in the center. Take it out of the pan and let it sit on a paper towel to absorb any excess oil.

I usually serve this whatever frozen vegetable is in my freezer, and salad. It's so easy to make, and every time I make it my fiance tells me how good it is. Now if he'd only say that about the rest of my cooking...

Make a frittata! In large ovenproof (nonstick also) skillet, cook veggies such as diced onion, a little garlic, and then add crumbled cooked bacon, ham (whatever!). Beat 6-8 eggs with S&P, herbs such as parsley, and some parmesan cheese. Pour into skillet over veggies/meat. Cook on medium until bottom is lightly browned (do not mix--this will be like an egg 'pancake'). Place under broiler until the top is cooked and lightly brown. Slide out of skillet onto cutting board or large plate and cut into wedges using a pizza cutter or knife. Serve with green vegetable or salad. Leftover wedges make a tasty sandwich.

INGREDIENTS:
1 pound ground beef
1 pound smoked sausage, cut into 1/4 inch slices
1 onion, chopped
3 stalks celery
1 clove chopped garlic
1 medium head cabbage, chopped
1 (14.5 ounce) can stewed tomatoes
14 1/2 fluid ounces water
1 cup uncooked rice
garlic salt to taste

DIRECTIONS:
In a large stock pot over medium high heat, combine ground beef, smoked sausage, onion, celery and garlic. Cook until beef is evenly brown. Stir in cabbage, tomatoes, water and rice. Season with garlic salt. Bring to a boil, then reduce heat to low. Cover and cook for 35 to 40 minutes, or until rice is done.

try eggplants sliced fine and fried slightly condimented with chilly smashed together with some garlic, salt n pepper n touch of lemon.
salty fish or tuna acompany with some lettuce and tomatoes and mayones
some fried potatoes.
