Tomorrow night I'm making fusilli (spiral pasta) with tomato sauce, using ground turkey. It's what we make when we don't feel like cooking and don't know what else to make. I like to vary the shape of the pasta and the type of ground meat -- ground beef one time, ground turkey the next, ground lamb if we can find it (add cinnamon and lemon juice for a classic Greek variation).
Tonight's dinner was really good -- lazy-man's paella. Brown slivers of onion and a few threads of saffron in a little butter and olive oil, brown chunks of chicken breast (but thighs would have been good, and a little cheaper) in the onions, add rice and stir to coat lightly in the oil/butter mix. Then add a couple spoonsful of sliced green olives, the leaves from three or four sprigs of fresh oregano, a 14-oz can of diced tomatoes (drained of juice), and a 14-oz can of chicken broth, plus a little salt to taste. Bring to a simmer on top of the stove, then turn down to low, cover, and simmer for 15 minutes. I served it with a bottle of De Casta Spanish rose (65% garnacha, 35% carenana), but it'd be good with a southern French wine (a Cotes du Ventoux or Cotes du Rhone) too.

cheesy chicken..........takes 5 min to prep, and cooks all day........5-6 boneless skinless ckn breasts, 2 cans cream of ckn soup, 2 cans cheddar cheese soup, salt and pepper to taste, cook 8 hours on low in slow cooker, serve sauce over rice, potatoes, pasta or veggies..........
