well, i would suggest buying them first. then, when its snack time, instead of grabbing that bag of chips, cut up a cucumber, or make yourself a small salad. you dont have to eat all your veggys at mealtimes. just spread them out throughout the day.

I pick ones that the glycemic index indicate are "low glycemic", so they don't raise my blood sugar. I mainly eat fresh or cooked green leafy vegetables, but sometimes I eat fresh baby carrots (even though they are "high glycemic". Cabbage and cauliflower are also on my regular eat list, as well as canned beans.

Salads are a great idea! Start with a few a week. You can use all kinds of great vegetables on salads. Use romaine lettuce instead of iceberg.

Buy a couple cans of carrots, peas, spinach, etc. Along with your "healthy" meal, dump some "fresh" veggies on your dinner plate. Mmm, mmm, homemade meal.
