Most "chinese food" is cantonese. Sweet, spicy, and fatty food that americans like.
Traditional chinese food is typically more mandarin, far more light and airy, the tastes are most subtle and full. This is the food that gives chinese food the reputation of making you hungry again in an hour, because it is so light. Also, it may be that it is simply very difficult to eat a great deal of mandarin food without chopsticks!
That said, my girlfriend's mom does an amazing steamed sea bass with chinese green onions and a (very) thin oyster sauce. In traditional chinese cooking, the fish is served whole, fins, head, eyes, and all. The eyes in particular are quite tasty, and there's some meat back behind the gill area that can be very tender as well.

I like a lot of different kinds of Chinese food, but I always seem to order the sesame chicken....it's my favorite. I also get an order of fried rice and chow main.
I have a question for you though. Do you get hungry again about 2 or 3 hours after you've eaten Chinese food? I always do, that's why I order enough the first time so I can eat some more of it later. :-)
