there's no effective method of mechanical shelling, so the nuts have to be harvested carefully by hand, using wooden hammers to avoid breaking the kernels. First, they're roasted in the shell to make it brittle and easier to open -- this also reduces the toxicity of the cashew oil.

You see, it turns out the cashew is not only related to the mango, but to poison ivy and poison oak as well. The skin and fruit surrounding the kernel (the nut-in-the-nude you find on your supermarket shelves) can cause skin eruptions just like those produced by its well-known cousins. Even the smoke from roasting the cashew can cause severe reactions.

Many years ago, the government made is illegal to cashews in their shells. Most of the cashews we eat come from China, India or Brazil. Their shells are toxic. Cashews are grown on trees that are covered with small yellowish apples. At the bottom of each apple grows a thing that looks like an inflated lima bean. That is the nut. It has a thick outer shell and a thin inner shell. Between these layers is an oily, toxic liquid. After the nut meat is removed, this liquid is recycled into buck spray. Did you know that a distant cousin of the cashew is poison oak?

The Cashew grows in a tree and has two layers of protection. There is an outer shell and an inner shell. Between the two layers there is a layer of poison. Cashews are so expensive due to the extra precautions it takes to keep the inside meat/nut safe from this poison. (Cant remember the exact name of the poison...I think it's like arsonic or something.)

And that my friend is why you never see the cashew in a shell. Way too dangerous for the normal consumer.

I have heard the shells are poison. Where did I hear that? I wouldn't want to be thoroughly scrubbing my hands every time I cracked a cashew but I would say you can buy almost anything if you have the money, even cashews still in their shells. I would try e-bay.

Haha, cashew shells are actually full of a caustic phenolic resin, which is similar to poison ivy. Cashew processing workers often have exceedingly painful rashes because of it.

they dont come in shells they come on the end of a pear shaped fruit, one little lone cashew just hanging there odd huh?
