How do I go about looking for one in my area? Do I need to look under "consignment shop"? Also, how do I get paid when I sell my items to them? Do I only get paid when my items sell to other customers or does the consignment shop pay me directly when I bring my items in? How does that work?

All consignment shops are run differently. I know, I own one.
Look under consignment shops in the yellow pages. It will list all in your area.
As far as getting paid. You get paid when your item sells. You sign a contract on the items brought into the store. It will depend on what that shop charges. % wise. In my shop I pay-out 50% of the actual sale. Some shops charge more, some less. It varies.
Everything is computerized. My consignors have 60 days to sell at their asking price. Say, for instance, you bring in a stereo system. You want $60.00 for it. I would sell it for $120.00. When it sells, you receive $60.00. If in 60 days your item does not sell, than the price is reduced to 1/2 price. Now sells for $60.00. When sold you will receive $30.00. If you don't agree to that, than you have the option to remove your item from store. contract is void. It's that easy.

How do you know you'll get your fair share of the cut?

Consignment shop owners do have a good sense of what they can ask for an item. The price may not seem fair, but just because you paid $100 for a suit doesn't necessarily mean you can resell it for $95. You really have to trust their judgement. The 50/50 split is very typical. That too may not seem fair, but they're really doing you a service.

I've been selling a few things on craigslist, and it really is a pain trying to hook up with someone. If you take your stuff to a consignment shop, you don't have to deal with all that. If you have a lot of items, that's really the way to go, or if you just have a few big ticket items.

As far as whether or not they're honest....chances are they're not going to scam you. After all, they have to stay in business!

I own a consignment shop. And we all work differently. If you consign with a shop you get paid after the item is sold to someone. sometimes I buy thing out right. But you will make more by consigning. Usually, you will get a precentage of the sale. I do mine 50-50. If I sell something for $10.00 you would get $5.00 and the store would get $5.00. Some places do 25% to 75%. And you would get the 25%. But it depends on the store. You can look in the yellow pages under consignment to find a shop in your area.
